ASSUMPTION - Aliese Hill of Archbold, Ohio, came home to Assumption to visit and took home with her a Decatur Herald & Review Cook's Choice recipe, Best Sweet Rolls by Marilyn Carter Wood.
Today, she submits a couple of her favorites. The middle school music teacher and her husband, David Hill, live where Sauder Woodworking, the ready-to-assemble furniture, is made. It's also the site of Sauder Village, a mid-1800s living history site.
Here is her favorite recipe, which came from her mother, and her second favorite.
Ice Cream Dessert
12-ounce package vanilla wafers, crushed
1 / 2 cup melted margarine
1 / 2 gallon vanilla ice cream
2 cups powdered sugar
2 one-ounce squares unsweetened chocolate
3 eggs, separated
1 1 / 4 sticks margarine
Optional: chopped pecans and coconut or your choice of toppings
Blend wafers and 1 / 2 cup melted margarine. Reserve 1 cup crumbs for topping. Press balance in a 9-by-13-inch pan. Melt chocolate and 1 1 / 4 sticks margarine. Add sugar and well-beaten egg yolks; cool. Stiffly beat egg whites and add to cooled mixture. Pour mixture over wafers and cover with softened ice cream. Sprinkle wafer crumbs over top.
(I think all ice cream tastes better with pecans, so I add chopped pecans and lately, I've also started to add coconut.)
Cover and place in freezer until hard.
Serves 12 to 15 people.
Poppy Seed Bread
1 package Duncan Hines yellow cake mix
1 small box instant coconut cream pudding
1 / 4 cup poppy seeds or less
4 eggs
1 /2 cup oil
1 cup hot water
Mix ingredients in a large bowl with mixer for 4 minutes..;Pour into 2 greased loaf pans and bake at 350 degrees for 40 to 50 minutes, depending on oven..;Remove from oven and cool 15 minutes before removing from pans.
